Madagascar Red Pompona Vanilla (Mexican Vanilla) stands out for its large, fleshy pods up to 25 cm long – shiny, supple, and intensely aromatic despite their lower vanillin content. Its complex fragrance combines woody, leathery, floral, and caramel notes, offering a refined and distinctive sensory experience. Originally from Mexico and the Caribbean, this rare species has adapted beautifully to the northeast region of Madagascar. It requires exceptional craftsmanship and a longer curing process than Bourbon vanilla. Highly valued by perfumers for its natural richness in coumarin and by gourmet chefs for its rare and sophisticated aroma.
